'm not sure when it happened, but at some point in my adult life salmon became my favorite food. Growing up the only salmon we ate was canned. Occasionally my mother Ruthie made salmon croquettes which I loved then and still enjoy; however, I make them with freshly poached salmon and they are much better than Mom's, but don't tell her. Driving through the Catskills along Route 28 to reach Ashocan, I happened to drive by the Hickory Barbecue and Smokehouse. The third generation of owners were clever enough to have a big sign outside: BBQ Brisket and Salmon – my two favorite foods. In two days, we ate there twice so that I could eat salmon and brisket, once for dinner and then back in the morning for brunch. It’s affordable, there was local entertainment, a young girl and her mother sang show tunes, and the food is very affordable. Don’t worry – they also have all of the BBQ standards anyone could want and more: ribs, turkey, beef, mac and cheese, stew, everything is great. What a find!
